2002 Indy 700 Classic - Draining oil?

I've recently got a new sled and the previous owner used an Esso mineral oil instead of the recommended synthetic oil.
The oil tank still has quite a bit of oil in it (probably 2/3rd's full). Is it easy to remove or drain this tank or would I be better off just running it as low as possible and then filling up with the new oil I've now picked up. I don't want to mix the oils in case there is a reaction/gelling.

Unfortunately, I didn't get the manual and I'm struggling to find one online, so any help would be greatly appreciated..
