Post you favorite dishes/recipes.


SOUTHWEST WHITE CHILI
INGREDIENTS
1tsp.olive oil
1lb. boneless, skinless chicken breast
1/4 cup chopped onion
1 cup chicken broth
1 can(4oz.) chopped green chilies\
1 can (19oz.) white kidney beans (cannellini), undrained
fresh or canned crushed whole garlic clove
SPICE BLEND
1tsp. garlic powder
1tsp. ground cumin
1/2tsp. oregano leaves (crushed)
1/2tsp. cilantro leaves (crushed)
1/4tsp, ground red pepper
DIRECTIONS
Heat oil in 2 to 3 qt. saucepan over medium high heat.
cook onions and fresh garlic until onions are transparent.
add chicken and cook about 4 to 5 minutes, stirring often.
remove chicken with slotted spoon; cover and keep warm.
Leaving onion and garlic in pan stir in broth, green chilies. and spice blend
simmer 30 minutes.
Stir in cooked chicken and beans. Simmer for 15 minutes.
Garnish with grated Monterey Jack and onion slices, if desired.
Makes 4 servings.

Can be quite hot if you choose.

99%-fat-free
condensed

with 1/3 less

simple dip? take a can of hormel chili, and a thing of velveeta cheese. microwave.

ill post my stir-fry later (its a real dish, but so is that dip. that dip is amazing by the way). i know all the stuff in my stir fry but not specifics since i just eye ball it these days

Simple but great snack.

Soft tortilla shells , lay flat cover with thin layer cream cheese, then another layer of Hot mustard , sprinkle with cut up scallions then lay a enough sliced ham to cover. roll tortilla up into roll and stick with tooth pick to hold together and chill for 1 hour. Onced chilled slice roll into bite size pieces approx 5/8 inch thick.

And always chase with cold beer.

Ziti With Sausage and Zucchini

Ingredients
1 package (16 ounces) ziti rigate or wagon-wheel pasta
- - salt
3/4 pound sweet Italian-sausage links, casings removed
3 medium zucchini (about
8
ounces each), each cut lengthwise in half, then cut crosswise into 1/4-inch-thick
slices
1/4 teaspoon coarsely ground black pepper
1 can (28 ounces) whole plum tomatoes
grated Parmesan cheese (optional)
Preparation - Estimated cooking time: about 25 minutes -
1 In large saucepot, prepare pasta in boiling salted water as label directs.
2 Meanwhile, heat nonstick 12-inch skillet over medium-high heat until hot. Add sausage
meat and cook until browned, about 5 minutes, stirring frequently to break up sausage. With
slotted spoon, transfer sausage to bowl.
3 Discard all but 1 tablespoon sausage drippings from skillet. Add zucchini, pepper, and 1/4
teaspoon salt and cook until zucchini is golden, about 5 minutes, stirring occasionally. Stir
in tomatoes with their juice; heat to boiling, breaking up tomatoes with side of spoon.
Return sausage to skillet. Reduce heat to low; cover and simmer about 5 minutes longer.
4 Drain pasta; return to saucepot. Add sausage mixture; toss well. Serve with grated Parmesan
cheese if you like.

Lets see, 1 Green pepper, core seeds from pepper and eat?? Or Green Pepper stuffed with 2 mice ,cover with framunda cheese?

my german grandma makes great stuffed peppers too mouse...

stir-fry is very loose with ingredients. any veggies, any meat you want ( best is chicken IMO.) sauce is a little sugar (2tsp), crushed red pepper (to taste,i would say a little over 2tsp) sherry wine, soy sauce, ginger root (2 teaspoons of that, its strong), i use some chinese 5 spice, and a small amount of corn starch.

mix the sauce together, put the meat in with it, mix it around. prepare the vegetables, start frying them. take them off when done, fry up meat. then add veggies to it when done to heat it up. i usually add some more soy/wine/red pepper here. then its done haha.

i would say like 2 or 3 veggies, the pan can get crowded you know. i use peppers, snap peas?, water chestnuts, carrots. and some onion too

Spaghetti With Chicken
l 1/4 pound thinly sliced
prosciutto or cooked ham
l 1/4 cup grated Parmesan
cheese
l 1/4 cup plain dried bread
crumbs
l 2 tablespoons minced parsley
l 1/2 teaspoon dried oregano
leaves
l 4 medium-size skinless,
boneless chicken-breast
halves (1 pound)
l 2 medium-size tomatoes
l 2 tablespoons salad oil
l Salt
l One 13 3/4- to 14 1/2-ounce
can chicken broth
l One 16-ounce package
spaghetti
l Fresh oregano for garnish
1. Mince prosciutto. In small bowl, stir together prosciutto, Parmesan
cheese, bread crumbs, parsley, and dried oregano.
2. Holding knife parallel to work surface and starting from a long side,
cut each chicken-breast half in half, cutting almost but not all the way
through. Spread chicken-breast halves open. With meat mallet or dull
edge of French knife, pound chicken evenly thick.
3. Sprinkle each breast half with 1 heaping tablespoon prosciutto
mixture; reserve remaining mixture. Starting from a long side, roll each
breast half jelly-roll fashion; secure with toothpicks.
4. Cut core from each tomato. Place tomatoes in boiling water 10
seconds; cool under running cold water. Peel and dice tomatoes; set
aside.
5. In 12-inch skillet over medium-high heat, in hot salad oil, cook
chicken rolls with 1/2 teaspoon salt until chicken is browned on all sides
and loses its pink color throughout, about 10 minutes. Remove chicken
to plate; keep warm. In drippings remaining in skillet over high heat,
heat chicken broth and diced tomatoes to boiling, stirring to loosen
brown bits from bottom of skillet. Reduce heat to low; cover and
simmer 5 minutes to blend flavors.
