Should I be using high octane fuel (91, 89)
I have a 2000 yamaha vmax 500 and I don't know what kind of gas to put in.

Yep! There are alot of things to do to that sled, but prem wont help!

Do watch out for high ethanol in your fuel, that can cause excessive heat, not sure what is considered high these days but for sure, avoid the green ethanol pumps.
