Unhappy Very Disapointed

I got to vent to someone here...but here goes. As some of you know, in early November I started to tear down the engine on the TNT. Well, the job turned out to be a tad over my abilities, so I sent the motor out for service. I just recently got the engine back, as of last Friday. They replaced the pistons, bored it 40 over, complete gasket set, new rings, new heads ect...In any event, it was completely redone. I am feeling pretty damn confident now that its going to be great. I got the new plug wires and fuel lines today, and I put them in. I mixed up 3 gallons of fresh 50:1 mix, and I took a couple pulls to the ole TNT, and she fired right up. So i loaded her up, and brought her our place where we ride. When I got there, the damn thing just kept shutting down. I was still optimistic, but was beginning to get very discouraged for there to be any issues with the machine. I know its the damn carburetor, because I cant seem to get the thing to run at the right mixture. The carb would go from sputtering fuel out the carburetor and onto the seat, from just plain ole dying out. I couldnt get it maintain idle or any high RPM's. Could a bad carburetor be the only problem. Its getting good spark, so it aint that. Or could it be the filter, or what? I want to just buy a new carb and slap it on, but i wouldnt know if that would guarantee a good run. Going a little crazy because this thing looks to good to be running like this. Thanks guys.

Just a tad, then it just wants to kill the entire time. I am looking at the manual and its saying theres 4 adjustments for the carb: Maximum throttle opening, idle speed mixture, idle speed, and high speed mixture. I think I only have 2 screws, ones air and ones gas right? The gas screw is the one with the return line coming out of it right? And the one on the right side is the air screw. I sort of have an idea of what combinations are better, it seems to run pretty good when the left screw (gas), is almost all the way closed, and the air 1 turn open. Then when i turn the gas screw back more, thats when it starts to sputter gas..Is it better to have more fuel and less air, or more air and less fuel?
