Is it easy? or is it something professionals do?

Not hard you can do it yourself with a grinder or a good pair of tin snips.The only thing with snips is that you can't close them all the way when making a cut or the windshield will crack.
A zip disk on a grinder works well.

What about the rubber stripping that goes on the edge? Is it easy to put back on?

It goes right back on.You'll have to trim it of course.I use superglue or an equivalant to secure it back on.
