I happened on a 2003 Z 570 ESR last summer with a destroyed engine. I got a screaming deal on a factory replacement engine but the clutch needs to be a 33mm instead of the 30mm that was on it. Not a big deal I hope as the 30mm was not taken care of. If I use a clutch from a 2011 F5 what spring and weights should I use to maintain stock performance?

This link will show you the parts numbers that you need, just put in Z 570 and select the year and model.

Just use the same spring and arms from the original! As long as the 33 is not the fixed pin type! If it is you will need heavier arms!
