after about an hour of riding the machine it wants to bog down. now it is not over heating and the plugs were replaced to a hotter plug. it's when you hit the throttle it chokes out. any write up anywhere someone can lead me to would be much appreciated.

Sticking clutches will cause a low end and acceleration bog.
Many people will spend Many$ chasing a supposed carb problem or other internal engine problem and all the time it was sticking clutches. Have you ever cleaned them?

it does it before the clutch engages, but if it were a clutch problem how do i go about cleaning it?

Ok, have you cleaned the carbs?
Not just with spray cleaner, but by soaking them and blowing out the passages with compressed air?

To clean the clutches, start by removing the belt and blowing them out with compressed air to get the belt dust out.
Next, I use spray brake cleaner and spray down the areas where the parts move. The weight pivot points and the center shaft and bushing. Blow out with air again and repeat as necessary.

Do not use any oil or grease on them. A dry lube (powdered graphite or a clutch lube) is the best, or leave them dry.
