about the riser: to see how big you can go, cut a block of wood however big you think you want the riser (maybe start with 4 inches if you don't want to redo cables) and stick it in the spot where the riser would go. then make sure all the cables are not stretched, turn the handles all the way one way and the other, and if it's too tight where it interferes with it's proper operation, then that is too big. so cut off an inch or whatever and keep trying till you find the right height.
